About the Role

We are looking for a Production Chef to join our team on a seasonal contract from March to November 2023. This role is based at our hangar facility in Broome and is an integral part of our catering team and overall guest experience. The main responsibility of this role is to ensure effective preparation and cooking of food items, which are transported by our fleet of seaplanes to our pontoon for our guests to enjoy as part of their tour.

Duties include:

  • A consistently high level of food preparation and delivery, ensuring consistency in the products/recipes used across the season
  • Working closely with the operations and aviation teams to ensure that food deliveries are scheduled to arrive to the pontoon in accordance with the required timeframes
  • Storage of food items in accordance with temperature control processes
  • Maintaining appropriate records for Food Safety and HACCAP, focusing on hygiene, cleanliness, and general safety in food preparation areas
  • Remaining vigilant in identifying and communicating food allergens for any guest dietary requirements
  • Assisting with ordering of stock, stock control/conducting stocktakes and the delivery of stores
  • Promoting the safety culture, ensuring any incidents or hazards are reported and investigated in a timely manner

About You

To be successful, you will hold a Commercial Cookery qualification and have knowledge of HACCAP and Food Safety. You will have prior experience in a food production/fast paced kitchen role or similar. Key traits will include:

  • Being a team player, able to communicate effectively with all internal stakeholders
  • Able to work under pressure, prioritise and identify key priorities to ensure smooth service delivery
  • High attention to detail with the ability to accurately forecast and identify ordering requirements
  • Proactive and solutions focused approach with a ‘can do’ attitude to achieve the best outcome for business operations
