Cruise Whitsundays is an award-winning, innovative, and experienced maritime operator, based in Airlie Beach. Our experiences include day and overnight tours throughout the Whitsundays and the Great Barrier Reef, as well as resort connection services. We are proud to offer Australia’s first underwater accommodation, Reefsuites, on The Great Barrier Reef and exclusive Reefsleep experience at Reefworld on Hardy Reef.


About the Role

Reporting to the Guest Experience Manager, the Food amp; Beverage Manager is responsible for all aspects of the culinary experience at Cruise Whitsundays. Based at Port of Airlie, the Food amp; Beverage Manager oversees daily café and catering operations across the business including at the onsite Cruise Café amp; Bar, onboard vessels and at Reefworld a permanently moored pontoon, located 39 nautical miles offshore on the Great Barrier Reef. The Food amp; Beverage Manager also oversees catering operations for private charters and special events. The Food amp; Beverage Manager takes a hands-on role in ensuring café and catering operations run to budget without compromising on quality, range, safety, and the overall guest experience. They are passionate about all aspects of hospitality and are committed to continuous improvement across the business.

The Food amp; Beverage Manager is responsible for creating a strong, positive team environment, where standards are not simply met, but exceeded.

Key responsibilities include, but are not limited to;

  • Stay current on catering industry trends.
  • Identify customer needs and respond proactively to all of their concerns
  • Assist with menu creation
  • Develop SOPs and policies to improve operations, and ensure compliance within department
  • Build and maintain positive relationships with suppliers to ensure the business receives the best possible service and prices
  • Manage inventory and stock levels (managing substitutions where necessary in conjunction with chefs and supervisors)
  • Provide support to the Catering Chef and Café Supervisor and Operations Manager with regards to rostering and labour requirements for café, catering and Reefworld teams
  • Alongside the Catering Chef and Café Supervisor, hire, train and supervise café and catering staff to create a strong, engaged and high performing team.
  • Provide mentorship, leadership and guidance to Reefworld Chefs and contribute to performance discussions with Reef Experience Manager
  • Maintain and exceed standards of service and food standards, ensuring a 5-star guest experience
  • Budget development, adherence and business planning for continued improvement and growth

  • Roster with sound knowledge of the Hospitality Industry (General) Award
  • Provide insight through sound knowledge of POS and ordering systems
  • Manage Profit amp; Loss, Revenue and COG's
  • Generate strong growth in the Food amp; Beverage department
  • Ensure full, timely compliance with Australian Food Safety standards and WHS
  • Create a working environment with a strong operating rhythm to ensure efficiency and excellent food and beverage standards across the business
  • Ensure food and beverage operations are within budget without compromising on quality, range, and overall dining experience
  • Maintain an engaged, high performing and up to date workforce regarding all qualifications, learning plans and communication

Requirements

  • Minimum 5 years food and beverage management experience
  • Food Safety Supervisor (Level 1 - SITXFSA005 Use hygienic practices for food safety amp; Level 2 - SITXFSA006 Participate in safe food handling practices)
  • Cert III in Commercial Cookery (or similar) highly regarded
  • Responsible Management of Licensed Venues (RMLV).
