The Role

As the Food and Beverage Manager, you will play a crucial role in ensuring the delivery of exceptional dining experiences to our guests.

We operate in a 2-season environment, during our peak season your ability to work under pressure will see you stay calm and then in our off-peak season it is all about forward planning with a strong attention to detail.

This is a permanent full time position based in the Darwin office and frequent travel to our lodges will be required.

The role will also involve, but is not limited to:

  • Working closely with the operation providing guidance and support to establish and maintain consistency in the delivery of the food amp; beverage offering across all lodges.
  • Develop menus and collaborate with the chefs on site to ensure the delivery of exceptional dining experiences for our guests ensuring the food offering is unique to each lodge.
  • Provide training to the team, ensuring they are proficient in service techniques, product knowledge, and safety procedures.
  • Implement and maintain high standards of hygiene and food safety practices in accordance with industry regulations and company guidelines.
  • Monitor and control costs, including food and beverage inventory, and other operational expenses, to maximise profitability without compromising quality.
  • Engage with suppliers to source and select products, negotiate contracts, and ensure that quality and price standards are met.
  • Continuously evaluate guest feedback and implement improvement strategies to enhance the overall dining experience.
  • Support the recruitment and training of chefs.
  • Frequent travel to the lodges will be required to ensure the consistent delivery of food and service standards.

Requirements

About You

You will have a passion to travel and a love for sharing unique and iconic experiences through the delivery of an exceptional food and beverage offering. The ideal candidate will have:

  • Capacity to travel for multiple days at a time.
  • Extensive knowledge of food and beverage operations, including menu development, dining room service, and beverage management.
  • Excellent organisational and time management skills, with the ability to multitask and prioritise in a fast-paced environment.
  • Proven ability to manage budgets, control costs, and drive revenue growth.
  • A passion for delivering exceptional service and ensuring guest satisfaction.
  • Strong leadership and communication skills, with the ability to motivate and inspire a diverse team.
  • A minimum of 5 years of experience in a food and beverage management role, preferably within the leisure, travel, or tourism industry.
  • Trade Qualified Chef.
  • Understanding of food safety and hygiene regulations, and Food Safety certificate.
